decoration Stéphane Delétang, a dynamic young chef of 40 years of age, originates from Amboise and carried out his apprenticeship at the 4-star Restaurant Le Choiseul. After passing his cooking diploma, he worked for a year at the Château d’Esclimont, a 4-star Relais & Chateaux restaurant near Chartres. He then joined the famous chef Rémy Giraud at the Domaine des Hauts de Loire in Onzain, another restaurant which also obtained 15/20 from Gault and Millau, as well as a Michelin rosette. He arrived there as a kitchen help and left one year later as the chef’s first assistant!

After doing his military service, he joined the prestigious Molard team at the Château de Noizay, a 4-star Relais & Châteaux (14/20 Gault and Millau). Here he was second assistant to the head chef and for 2 years held the position of Chef Patissier.

After this, another well known chef whose career had followed a similar course, asked Stéphane to join him as assistant chef and Chef Patissier at The Blason in Amboise. He took charge himself two years later and was rewarded with 13/20 and a one ‘toque’ rating from Gault & Millau.
